「テロワール」は天地人によって現れされるものと考えています。降水量、日照量、湿度他、地域性による気候と、 多様な土壌の種類や、傾斜の向き、傾斜角度、岩山を背にする、丘の山頂部などの細かな場所の特徴、つくる人、 人たち、その家族の、哲学、センス、そして畑と葡萄に向き合う手仕事、それらによって、テロワールを表したワインが 作られるとアヴァンは考えています。 葡萄の皮にある野生酵母のみで、ワインは作ることができます。培養酵母を必要としません。その野生酵母を十 分に働かせるため、それにワインを表現させるために、ビオ、ビオディナミなどで葡萄を作ることが必要だと考えてい ます。酵母の働きを阻害させず、アロマや、味わいに蓋をしないために、酸化防止剤の無添加、または添加を最小限にとどめるワインを 選びます。 ワイナリーは、葡萄を育てワインを作り、飲む人たちまで直接届けることもできます。 また質の高いワインを作ることで、その価値を高めていくことができ、それを家族で、また世代をこえて取り組むこと ができる農業です。規模の大きすぎない家族経営のワイナリー、これまで長く続いてきた、これから続いて欲しい、そんなワイナリーを中心に ワインを選んでいます。 これからもどうぞ末長くお付き合いください。

They make wines only with the wild yeast found in the skin of the grapes. Also in order not to disturb the function of yeast and not to cover the aroma and the taste, choose the wine without antioxidant or with the minimum. The winery can grow grapes, make wine, and even deliver it directly to the drinkers. In addition, by making high-quality wine, they can increase its value, continue to work generations to generations.
